One of my first jobs while I was in college was working in the kitchen at a posh restaurant as a dishwasher. Aside from the mountain of food not eaten by the patrons and the waste produced during preparation (eg: not-so-perfect lettuce leaves), there was the end of shift purge of now-day-old-foods: breads, fruits, meats, etc…

I wondered why it wasn’t given to some local soup kitchen or even a meals-on-wheels group… I’ve continued to consider that waste every time I eat in a restaurant. One, it guides my purchase, but it also fills me with sadness at our wasteful consumption practices!

Here is a solution that might help tons of people!!!
